Double-Bacon Mushroom Burgers


8 slices thick-cut pepper bacon
1 1/2 lbs lean ground sirloin
1 egg
1 tbsp grill seasoning
1 tbsp herb and garlic seasoning
1/2 cup bread crumbs
1/2 red onion, finely diced
6 slices cheddar

6 oz (170 g) mushrooms, sliced
2 tbsp butter
1 clove garlic, minced

6 hamburger buns
Chipotle mayo
Thinly sliced purple onion
Pickles or pickled jalapenos
Lettuce


In a small food processor take 2 strips of the bacon and grind them up (or chop finely).  In a large bowl, combine the ground bacon, sirloin, egg, seasonings, bread crumbs and onions until just mixed.  Form into 6 burger patties.  Heat a grill to medium heat and cook the patties for 10 minutes, flipping once, until cooked through.  At the end of the cook time, top the burgers with cheddar and leave on the grill until cheese is melted then remove.

Meanwhile, in a medium saute pan over medium heat, add the butter and a bit of oil.  Add the mushrooms.  Saute for a  couple of minutes, then add the garlic and season with salt and pepper.  Cook the mushrooms until browned and then remove from pan.  In the same skillet, cook the remaining 6 strips of bacon until crisp.

To assemble the burgers:  Smear the chipotle mayo on the buns, and top with burger patty, a strip of bacon, some mushrooms, onion, jalapenos and lettuce.
